Paling Yards Olive Oil

showcasing the region’s best

When did you first start? We planted the trees in 1999 and had our first harvest in 2003

Why olive oil? After the tough years of the 1980s with the drop in wool prices and high interest rates, we needed to intensify. We looked at grapes, nuts, aquaculture and settled on olive oil.

What makes your product special? Ours is a single estate olive oil. The trees are predominantly Frantoio which produces fruit with a high yielding oil content and is very versatile. It’s classified as medium taste so it’s a well-balanced, slightly peppery, aromatic oil.
